The Weekly Spread #1
Since my daughter and her family moved in with us last year, we try to get together on the weekend to plan meals for the following week. Since she doesn’t have a car most days, and I work full time, it’s imperative that we plan ahead where we can. Things go so much smoother when we take the time to think ahead and prepare. We plan Sundays – Fridays and Saturdays we wing it as many of us are gone at one event or another.
Welcome to the Weekly Spread, where I hope to share our weekly meal plans, food finds and/or recipes.
Here is this week’s spread:
Sunday: Dinner at my parents. Pork Chili Colorado, rice and beans. I love my Mexican heritage and I LOVE my dad’s chili. Can’t wait!
Monday: Old School Chicken & Rice Casserole – My daughter pinned this one a while back and this will be our first time trying it. I’m all about comfort food and this one certainly looks like it will provide much comfort. We will serve this with fresh vegetables.
Tuesday: Crockpot Beef Tips & Gravy – This is another new recipe for us. We typically do a crockpot meal on Tuesdays. I can’t wait to try this out. We aren’t making the Weight Watchers version of this meal though, and we will be serving it with egg noodles.
Wednesday: Turkey burgers, Beans and Fries. No explanation necessary. We love our turkey burgers on sourdough bread with all the fixings.
Thursday: Chicken Fettuccini Alfredo. One of our family favorites. I buy the fresh chicken tenders, Bertolli Alfredo Sauce and serve over Rigatoni pasta. No fuss and oh so good.
Friday: Bean Chili served over rice with cornbread. This one is a family recipe and I hope to share the recipe in next week’s post.
